Cozy Ginger Breadmen

There's nothing quite like getting the kids involved with a little bit of festive baking. So I thought I'd kick-start it this weekend with the traditional gi gingerbread man!


Here's the recipe I used:

Ingredients 
• 150g butter
• 150g soft dark brown sugar
• 150g black treacle
• 450g plain flour
• 1tsp baking powder 
• 1/2tsp baking soda
• 1tsp sea salt
• 2tsp cinnamon
• 2tsp ground ginger 
• 1/4tsp allspice 
• 1 egg

Method

• Melt butter in a saucepan over medium-low heat.
• Add brown sugar, black treacle, salt, cinnamon, ground ginger, and allspice. Stir mixture together and then remove from heat.
• Transfer mixture to a medium to large mixing bowl and add the egg and beat it in to the mixture.
• In a separate bowl, add baking powder, soda, and flour and whisk together.
• Add the flour mixture to the sugar/treacle mixture and stir together with a wooden spoon.
• Devide the dough in to two balls and then wrap in clingfilm and refrigerate for at least one hour.
• Preheat oven to 180°C. Line baking sheets with grease proof paper and set aside.
• On a floured surface, roll dough into a thick rectangle shape. The thinner you roll the dough the crisper the biscuit, the thicker the dough the softer the biscuit.
• Cut out shapes with gingerbread man biscuit cutter and place at least an inch apart.
• Bake for 7-8 minutes. Dust with icing sugar or decorating with icing!
